Candied Pecans
Candied nuts are common throughout Europe during Christmas time. They are a typical open-air fair or Christmas market snack and are called by a variety of names, depending on the country and even the province or region within the country. Almonds are used most commonly, usually candied by caramelizing sugar on a stovetop - a somewhat tricky and time consuming process. This recipe uses an easy oven-based method to candy pecans, a sweet and buttery alternative to almonds. Candied pecans make great homemade Christmas gifts, packaged in small cellophane bags or jars.

Candied Pecans
Preparation time 15 minutes

Makes 450 grams/ 1 pound
Ingredients
- 450 grams (1 pound or about 3¼ cups ) pecan halves
- 150 grams (¾ cup) sugar
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 egg white
- 1 tablespoon water
- 1 tablespoon vanilla extract
Method
- Preheat oven to 120C (250F). Line a baking sheet with parchment paper and set aside.
- Measure all ingredients.
- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white, water and vanilla together in a separate bowl until frothy, about 1-2 minutes.
- Add pecans to the egg white mixture and mix until all the pecans are evenly coated.
- Sprinkle sugar mixture over the pecans and mix again until evenly coated.
- Transfer the mixture to the prepared baking sheet, spreading out the mixture into an even layer.
- Bake for 1 hour, stirring every 15 minutes, to ensure that the pecans are evenly browned and do not burn.
- Cool completely before storing.
- Store in an airtight container at room temperature for several weeks.
