          Favorite cookbook

          Although the French Culinary Institute changed names and then shuttered its doors in 2020, this cookbook remains the best resource and guide on baking. I have about 70 cookbooks in my library, but none are as comprehensive or as useful as this one:

           

          • The Fundamental Techniques of Classic Pastry Arts, The French Culinary Institute (2009)
